I purchased this to replace a large "non-stick" skillet that does nothing BUT stick to everything! Received yesterday and sauteed onions for hamburger steak in it. Meal turned out wonderful. Looked like something off of a cooking show. :) I look forward to cooking many more meals in it! Purchased Bar Keepers Friend and a Non-scratch Scotch Brite pad for cleaning. Definately when using for cooking, keep in mind Jeff Smiths (The Frugal Gourmet) adage: Hot pan, cold oil, food won't stick.

I had used the old fashioned plain iron omelette pan years ago and it worked great..no washing, just seasoned and wiped clean, but it looked awful so I then switched to a "non-stick" version until I recently read all of the articles about the dangers of plastics and coatings so I purchased the Calphalon Tri-ply Stainless Steel 8-Inch Omelette Pan. After experimenting with the right heat before adding butter, I'm delighted with the pan. It makes perfect omelettes and looks beautiful after a simple washing.



Now I can have my morning omelette and not worry about fumes or chemicals leaching into foods from a non-stick coating. I wonder why anyone would even need "non-stick".

So much so, I just ordered an 8 inch pan to go with it. Heavy but not awkwardly so. Very nicely made. Easy clean up and very nice to be able to use a steel utensil without fear of damaging the surface. It is also broiler safe, which helped for the dish I made last night. We have mostly Calphalon One in our kitchen but since getting this I have been using it extensively.



Although they call this an omelette pan, I have used it for cooking meats, vegetables and fish. Browns nicely. You can toss it in the dishwasher too. Always a plus!

Purchased this item six months ago. It is outstanding in the quality of its construction and design. Much more than merely an omelet pan, this utensil is perfect for general cooking use. By preheating the pan, using room temperature food, and not using the "blast furnace" setting on your cooking surface, the pan releases food just as easily as the coated "non-stick" variety and without the possibility of generating toxic byproducts.



The manner in which the handle is attached to the pan creates a minimal path for heat conductivity. With the pan surface equally heated, a cast iron handle requires a pot holder in order to comfortably touch, this pan can be handled easily by your bare hands. The handle is attached solidly with three bolts, but the end of the handle nearest the pan is split which dramatically reduces the handle temperature.



It is easy to clean just using soap and water. If, as I did, you leave food in the pan and forget to turn the burner off, food will stick. Most of it can be easily removed but for stubborn stains, a little application of "Bar Keepers Friend" will return the surface to shiny newness.



Cleaning the bolt attachment on the outside and on the inside of the pan is a little tricky, but any pan with similar construction would be just as problematic.

It can be difficult to get a cleaning pad in some of the small spaces around the bolts and just above the handle. A small amount of effort and a bit of patience will get the job done, however.



For even the casual cook, this cookware is a must have investment. It makes creating an omelet seem like the easiest task a cook could face.



I've always been a fan of cast iron, or porcelain coated cast iron, but this little gem has convinced me that Calphalon Tri-Ply is the perfect solution. Easy to use, easy to care for, easy to handle. It's a must purchase for your kitchen.

I have used a set of Calphalon non-stick pans for maybe 8 years. For a while they were good, but then started to loose their non-stick finish. I believe I followed the instructions for use and care properly. I can't help but wonder if the family and I have been eating bits and pieces over the years - yuck! Anyway they finally got to where they aren't non-stick any more and are very difficult to clean.



I started replacing them by purchasing the Tri-ply Stainless 8 inch pan. Wow!!! Seems almost more non-stick than the non-stick pans, very even heating, easy to clean. I think if there was one negative, it would be keeping it as shiny and new looking as when it was purchased, but so far that has not been a problem either. I absolutely plan to begin replacing my whole collection with this series.



By the way, I also looked as some other options such as All Clad - these are cheaper and my guess would be that these are at least as good, and the Kirkland from Costco - much cheaper, possibly not quite as quality made, but mostly there is a limited selection of items.



All in all, a great pan ( the whole line is good ), and I definitely recommend them to others where I may not have recommended the older non-stick.
